My brother Josh is the king of making vegetables taste like things that are um, not vegetables. When he gave me his secret for roasting cauliflower, my world was changed. Maybe someday I'll share that secret but I'll have to get his approval first. Pretty sure if I make him dinner, I can get that approval. Or find him a hot date. Whatever comes first. What I can give you is this little gem, Roasted Sweet Vidalia Onions.
Cut your onion into large slices and lie them on some foil, on top of a cookie sheet. Drizzle with canola or vegetable oil (they work better than olive oil but olive oil will work in a pinch). Using your finger, rub the oil around the surface of the onion.
Sprinkle with garlic salt, oregano and red pepper flakes. Or really,as Emily would say, anything that makes your skirt fly up.
Roast at 400 degrees for 35-40 minutes. If the rest of your dinner is finished and your onions aren't, pop them under the broiler for a minute or two and they will be amazing.
