Ok so I mentioned in my menu planning post the other day that John plays cards on Wednesday nights. And that I refer to this as "NERD". This is because John and his friends aren't playing something normal, like poker. They are playing...Magic the Gathering. Welp, I've gone and done it. I've shared my secret shame. My professional clean-cut, finance wiz husband is a closet fantasy-nerd-card player. The only thing that makes this secret a tad less shameful is that the guys he plays with are all like him...guys you'd never suspect of being Magic players. They don't live in their mom's basements, or spend all their time in virtual reality. They have wives and kids. They're fairly normal. I guess this is how he fooled me.
Anywhooz, they get together each week and rotate houses and whoever is hosting provides dinner. So last week, I made hot sausage and meatball sandwiches for the nerds and had leftover hoagie rolls. They went kinda stale in a hot second so I turned to my recipe stash to find something to do with these useless rolls. And I came up with this...
Caramel Apple Bread Pudding -- and this junk is low-fat!
Ingredients
1 Cup Unsweetened Applesauce
1 Cup Milk
1/2 Cup Eggbeaters or other fat-free egg product
1/4 Cup Brown Sugar
1 Tsp Cinnamon
5 Cups 1 inch cubes French bread -- or slightly stale rolls
3 Tbsp Sliced almonds
1/4 Cup fat-free caramel topping
Directions
1. Heat oven to 350 degrees. Spray pie plate with cooking spray.
2. In large bowl, mix all ingredients except bread, almonds and caramel with wire whisk until smooth. Fold in bread. Pour into dish. Sprinkle with almonds
3. Bake 30 to 35 minutes or until golden brown and set. Drizzle with caramel. Then cover that stuff with some vanilla ice cream and you've got yourself a treat.
I see my sharing of that dark secret with all of you akin to getting best friend necklaces with each and every one of you. Wear it with pride. Now, what's the skeleton in your poverbial closet?

I LOVE 16 and pregnant. Watching it now.
Oh, Shannon, we could totally be BFFS-- and nerd wives together! Mr. Kinne's "nerd night" is Wednesday, too, but he gets together with friends to play Warhammer-- which is a tabletop war game with little models. I figure it's better than him being at a bar....
LOL - that isn't such a bad secret. At least HE is the one playing and not YOU. Just kidding. :) That bff necklace just totally took me back to 1991. And yum at that recipe! What a great use for leftovers!
Oh...I didn't leave a secret. Hmmmm........man I am a boring person. I'll get back to you...
I'm right there with you. When I saw that you called "card" night "nerd" night, I thought you might be talking about Magic. My husband plays MTG as well. I don't really understand it, but at least now he's cut back on the card purchasing so it's not as pricey.
Oh man! You are so funny! But at least Magic is better than, say "Go Fish". Right? And that recipe looks great. Bookmarked!
Great idea to use leftovers...I wish I had some..My dark secret....my wine for sure...a glass a day and all
Can I have the Be Fri half? I always liked that half, for some reason.
I'm all for embracing nerdism. My (not-so) secret: an obsession for Harry Potter. I take that shit way seriously and have shed quite a few tears over that damn series.
I am all for NERD love. I love that my boyfriend is that way - he's playing DC Universe right now in the other room and has been planning his "character" for over a year - I wouldn't be surprised if he drew up sketches... but this is supposed to be about my deep secret right? I am obsessed with teen movies, not so much the new ones out now but things like Bring it On make my day [the original, not the horrible sequels].
This recipe sounds amazing. I'm so glad you followed my blog so I could find yours!
Yum and YUM. If only I had a working oven...
haha--thanks for admitting your dark secret :) your guy is way too funny! am glad that you were able to hide your true feelings and make them what appears to be a fabulous little treat.
Can I just tell you that I am actually jealous of you for having a nerdy husband? Mr. is really the only non-nerd I've ever dated and I can tell you nerds do not take themselves as seriously as non-nerds. They know how to take a joke and laugh at themselves.
haha that's funny! don't worry, i won't tell anyone your secret.
and while nerdy, yes, there are many worse things he could be doing!! ;)
your recipe looks fantastic.
